At Smiling Tree our sheep are grown slowly and naturally on a diet of herbs, hedgerows, wildflower meadows and lush diverse permanent pastures, and are never fed any grains, so you get all the health benefits of our deeply flavoured, sweet and tender lamb.

How to order your lamb

Lamb, hogget and mutton is sold fresh once or twice a year and, while stocks last, there is lean mince and diced meat sold frozen from the Farm Shop.

You can order a whole lamb (approx 10kg) for £8.50/kg which is then butchered into our standard cuts:

Whole lamb:
2 legs on the bone
2 shoulders on the bone
Chops or noisettes
2 packs lean mince
1 pack diced
Bones for making delicious broth or stock

The cuts are packed and labelled individually ready for cooking or freezing.

Benefits of our grass-fed lamb

Our lamb is raised on organically managed pastures

We raise our closed flock of pedigree Shetland sheep using holistic planned grazing on our organically managed pastures.

The ewes and lambs graze wildflower rich native grasslands and also rotate through herbal leys that include many medicinal herbs, including sheeps parsley, plantain, birds foot trefoil, yarrow and also chicory, a natural de-wormer. These fields of herbs give their meat a mouth-wateringly sweet depth of flavour.

Our lamb is chemical-free

Combining our grazing practises on these diverse pastures means our sheep stay strong and healthy, reducing the burden of parasites and, therefore, the chemicals normally used in raising sheep in the UK, even in organic systems. The lambs are not given any vaccinations, chemical foot baths or fly sprays. 

Our lamb is not fed any grains, roots, brassicas or silage

Our sheep are only fed their natural diet because not only is it good for them but it makes their meat more tasty and healthy for us. Cereal grains have a detrimental effect on both the flavour and nutritional quality of meat. Root crops, brassicas and silage can all give lamb a slightly 'off' cabbagy taint when cooking. Our lamb is sweet and meaty - you'll know the difference when you try it.

Our lamb is the perfect paleo food

A particularly special trait of Shetland sheep, a very old native breed dating back over 1,000 years, is that as they grow, any excess fat is deposited around their internal organs rather than in their flesh. Shared with other wild herbivores originating in cold northern climates, like elk, this trait means their meat is not only lean but has a darker colour, more akin to meat from a wild animal.

We allow our lambs to mature slowly, as their slower growing adds flavour and gives them a longer life.

As a result of our choice of breed and our farming practices, our lamb is nutrient-dense, sweet, tender, lean and very tasty: it is the perfect paleo food.

Our lamb is a healthy meat

The varied and wholly pasture diet gives the meat an exceptional depth of flavour, rich in nutrients, minerals, vitamins and heart-healthy fats. 

The health benefits of 100% grass-fed meat have been well documented by the Pasture-Fed Livestock Association: more vitamins & minerals, less total fat & saturated fat content but a healthier ratio of omega-3 to omega-6 fatty acids and more conjugated linoleic acid (CLA), a potential cancer fighter.

There are lots of reasons to eat our lamb but most importantly it's for people who like proper food.
